BOSTON COOKIES

Ingredients
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 lb dates (pits removed, chopped
  • 1 cup walnuts, chopped
  • 2 eggs
  • 2 cups flour
  • 1/2 tsp ground cloves
  • 1 tsp baking soda + 1 teaspoon of water
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp all-spice
  • 1/2 tsp nutmeg
  • 4 tbsp dark rum, optional
Instructions
  1. Preheat oven to 350-degrees.

  2. Cream the butter and sugar. Beat in eggs, one at a time.

  3. Chop the dates and nuts and mix with a light dusting of flour to keep the dates from sticking together.

  4. Sift the flour and spices and salt into the egg-butter-sugar mixture.

  5. Mix the baking soda with a teaspoon of warm water and add to mixture.

  6. Add the (optional) dark rum.

  7. Grease a cookie sheet once.

  8. Drop by the teaspoon onto cookie sheet.

  9. Bake for 12-15 minutes, until lightly browned.

  10. Remove from oven and allow to cool on a baking rack before serving.
