Sweet and simple banana bread bursting with flavor and soft texture
Preheat oven to 325-degrees.
Lightly grease 4-mini-loaf pans.
In a large bowl, combine the butter, sugar, vanilla, cinnamon, nutmeg, baking soda, baking powder and salt. Beat until smooth.
Add the mashed bananas, jam, honey and eggs and beat until smooth.
Spoon the batter into the loaf pans. Allow to rest at room temperature for about 10 minutes.
Bake the bread for 40-minutes, then add a piece of aluminum foil across the top and bake for an additional 15-minutes. Use toothpick to determine if bread is well done.
Allow bread to cool for 10-minutes in the loaf pans. Remove from pans and allow to cool completely on a baking rack.
