Ingredients
  • 3 Eggs
  • 3/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted and cooled
  • 1 teaspoon butter, for greasing the skillet
  • 1 cup all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1 cup milk (you can also use almond milk)
  • 1/2 teaspoon vanilla extract
  • 2 tbsp cognac
  • 1-1/2 cups cherries, pitted
  • 1/2 cup blackberries
  • 1/4 cup powdered sugar, for dusting
  • Vanilla bean ice cream or whipped cream for topping
Instructions
  1. Preheat oven to 400-degrees

  2. Whisk together eggs and granulated sugar.

  3. Add the melted butter and mix well.

  4. Add the milk and whisk until smooth.

  5. Add extract and cognac and mix until combined.

  6. Grease skillet with butter.

  7. Add fresh fruit to skillet and pour the batter evenly over the fruit.

  8. Bake for 30-35 minutes or until lightly browned.

  9. Let Clafoutis cool slightly before dusting lightly with powdered sugar.

  10. Slice and serve with whipped cream or vanilla bean ice cream.
