Homemade Basil Pesto

Fresh pesto is an easy sauce that pairs with just about anything. Delicious when served atop grilled chicken or toasted mini breads as a snack.

Ingredients
  • 2 cups Fresh basil leaves
  • 1/4 cup Fresh parsley (no stems)
  • 3/4 cup Lightly toasted pine nuts
  • 2 cups Freshly grated Parmesan cheese
  • 1 Garlic clove (more or less, as desired for taste)
  • 3/4 cup light olive oil, (more or less, as desired)
  • Pinch of salt, to taste
  • Dash of pepper
Instructions
  1. Spread the pine nuts evenly over a baking tray and bake at 350-degrees for about 5 minutes. Do not allow to burn.

  2. Place basil, parsley, and toasted pine nuts into a food processor and pulse a few times to lightly chop.

  3. Add cheese and garlic.

  4. Add olive oil as food processor is churning. Add more or less depending on the desired consistency.

  5. Add pepper and salt, to taste

  6. Mix well and serve.
